Smoked fish pasta salad
2 medium cucumbers
1 LB small pasta shells
2 TBS. olive oil
1/2 cup thinly sliced scallions
1 1/2 LB Smoked Whitefish or Lake Trout fillet, skinned and broken into large flakes
2 TBS. chopped fresh dill
1/4 cup chopped fresh parsley
Lemon Caper Dressing
Peel, seed and thinly slice the cucumbers. Place in a bowl of ice waterfor at least 30 minutes.
Cook pasta in salt water until al dente, drain, refresh with cold water anddrain thoroughly. Pour into a large bowl and toss with the 2 TBS. of a good fruity olive oil.
Drain the cucumbers thoroughly and add to cooked pasta.
Add fish, onions, dill, parsley and dressing to pasta. Mix well. Season to taste with salt and white pepper.
Pile onto a large platter lined with crisp lettuce leaves. Garnish with sprigs of fresh dill.
